Assessment of yield on swine carcass compared with bovine carcass

The presentexperiment aimed to evaluate and compare the yield and profitability of bovine and swine half carcasses meat cuts. Considering the shortage of scientific studies that evaluate yield of carcasses in financial terms for meat trade.Halfbovinecarcassandhalfswinecarcasshadbeenusedtoperformmeatcutsat Instituto de Tecnologia de Alimentos/Centro de Pesquisa e Desenvolvimento de Carne – Campinas/SP. Data were obtained by weighing the meat cuts and the yield was calculated on both carcasses. The calculations resulted in 62.38% of yield on the swine and 38.00% of yield on the bovine carcass. The swine carcass had a higher yield due to the lower purchasing cost of the carcass, better use of the cuts and by-products and lower prices to the costumers.
